It’s easy to find servants in the 1940 census. Using Ancestry Library Edition (Ancestry LE), you can search in the 1940 census specifically. On the Ancestry LE landing page, just scroll to the bottom of the page and select:

U.S. CENSUS RECORDS—1940

Next, do this search:

LIVED IN: Saint Louis County, Missouri, USA (Exact)
RELATION TO HEAD OF HOUSEHOLD: Servant (Exact)

This search gets 3,547 hits. You can add additional qualifiers like GENDER or BIRTH YEAR to the above search. For example:

LIVED IN: Saint Louis County, Missouri, USA (Exact)
RELATION TO HEAD OF HOUSEHOLD: Servant (Exact)
BIRTH—YEAR: 1920 (+- 5 years)

This search finds servants living in Saint Louis County in 1940 who were 15-25 years old. This search received 1,369 hits.
